My colorful Crunchy Bean salad. This recipe is nutritious, economical and easy to prepare it serves great for parties, potluck, picnics or to keep in the fridge for busy weeks. It can also be served as a side dish with tacos or nachos.
As i told you i'm not going to bore you with just Greens but surely healthy salads. My motive was to have all the nutrients and keep a balanced diet, if you are only on a salad diet or not, this dish will keep you full and satisfied. So i decided to use beans as my main ingredient as usually beans are most under utilized out there.
Beans have many benefits they are high in antioxidants, fiber, protein B vitamins and many more. Eating beans may help decrease the risk of diabetes, heart diseases and helps with weight management.
So surely you don't wanna miss this one.....after all, Its packed with Protein!!!
Ingredients
1 cup of Mixed Beans - Black Chickpeas, White Chickpeas, Kidney beans
1 Onion
1 Tomato
1/2 each Bell pepper - Red, Yellow and Green
3 pods of Garlic
Fresh Coriander leaves or Cilantro
1/2 Green chilly (optional)
Dressing
1 Lime Juice
A cap of Vinegar
Pinch of Sugar
Salt if required.
Method
Soak the mixed Beans over night and boil it with a little salt and leave it to cool.
Mean while, chop Onions, Tomato and Bell peppers. Finely Garlic, Chilly and Cilantro too.
Mix all the ingredients in a bowl add sugar vinegar and lime and check the taste, before adding salt.
This dish is ready in no time and serves best.
